FRASER INSIDER

STORY BEHIND THE POPULAR HOT & DRY NOODLES

In Wuhan, there is a saying that one can go on for a month without eating a repeat of the same breakfast item.  Cuisine in Wuhan carries a combination of northern and southern culinary influence, so it is no wonder hot & dry noodles has been unanimously crowned by locals as the "King of Breakfast Choice".  The streets of Wuhan are lined with endless noodle shops, yet queues still form, just to get your hands on one bowl!  The best way to integrate into the local culture is to sit along the sidewalk, slurping down hot-and-dry noodles.

The birth of hot-and-dry noodles was ‘accidental’ and closely related to the climate as well as the thriving wharf culture in the history of Hankou.  To extend the perishability of the leftover noodles, the noodles were boiled, and sesame oil added to it.  So there you have it!  The birth of a dish close to the hearts of many in Wuhan.
